A classic of Sicilian home cooking, pasta alla Norma features a deliciously rich tomato sauce and golden pieces of fried aubergine. If you can’t find boccole pasta, use any short tubular pasta available to hold that delicious sauce. Any leftovers will keep refrigerated for up to three days.

Step preview

  1. Fit the Stir Tool and Stir Assist Clip
  2. Add oil into the appliance bowl
  3. Heat - 1 minute, 140ºC, speed Off
  4. Add the next ingredient
  5. Cook - 5 minutes, 140ºC, speed Stir 2
  6. Using a slotted spoon, transfer the cooked aubergine into a medium bowl
  7. Repeat the same process with the rest of aubergine
  8. Add the ingredient into the appliance bowl
  9. Cook - 1 minute, 110ºC, speed Stir 1
  10. Add the next ingredients
  11. Cook - 10 minutes, 100ºC, speed Stir 2
  12. Add water into a large pot and bring to the boil - high heat
  13. Add salt, stir to dissolve and then add pasta
  14. Cook - 9 minutes, medium-high heat
  15. Drain pasta into colander, then set aside
  16. Add the cooked aubergine into the appliance bowl
  17. Cook - 5 minutes, 102ºC, speed Stir 3
  18. Add the cooked pasta and stir through using a wooden spoon
  19. Divide the pasta between the serving bowls
  20. Top with basil and cheese
  21. Serve
