These tasty cakes take a little longer to make but are still easy. We've made a tea syrup to boost the flavour, but feel free to leave it out. If you have a piping bag, you could pipe on the icing.

Step preview

  1. Preheat the oven - 170ºC
  2. Line the cupcake tins with paper cases
  3. Add the ingredients into a saucepan
  4. Heat until almost boiling – medium-heat
  5. Let cool and then strain into a jug
  6. Fit the K-Beater
  7. Add the ingredients into the appliance bowl, and then add the milk mixture
  8. Mix and then scrape the bowl - 1 minute, speed Min
  9. Mix – 2 minutes, speed 3
  10. Spoon the mixture into the paper cases until about ¾ full
  11. Bake – 50 minutes, 170ºC
  12. Now, make the syrup
  13. Add the ingredients into a saucepan
  14. Heat, stirring frequently, until dissolved – medium-high heat
  15. Strain the syrup into a small bowl
  16. Brush the syrup over the warm cupcakes and let cool
  17. Now, make the icing
  18. Clean the appliance bowl and fit the Whisk Tool
  19. Add the ingredients into the appliance bowl
  20. Whisk and then scrape the bowl – 1 minute, speed Min
  21. Whisk – 4 minutes, speed 4
  22. Swirl the following ingredient into the mixture
  23. Spoon the icing onto each cupcake and smooth
  24. Serve
