This simple recipe is a great introduction to Japanese cooking. Delicious hot or cold, the chicken is marinated in traditional Japanese flavourings before being dredged in potato starch and fried until crispy. Best served with a big dollop of kewpie mayo for dipping.

Step preview

  1. Add the ingredients into a medium bowl and stir to combine
  2. Chill in the fridge - 4 hours
  3. Add the ingredients into a clean medium bowl
  4. Remove the marinated chicken from the fridge and drain
  5. Transfer the drained chicken into the medium bowl and coat in the potato starch
  6. Transfer the coated chicken to a plate
  7. Let rest - 5 minutes
  8. Line a baking tray with kitchen paper
  9. Add oil into the appliance bowl
  10. Heat – 1 minute, 180ºC, speed off
  11. Place the chicken back into the medium bowl
  12. Coat in the potato starch again and shake off the excess
  13. Add 3 pieces of chicken into the appliance bowl
  14. Fry until browned – 3 minutes, 180ºC, speed off
  15. Flip the chicken carefully
  16. Fry until browned – 3 minutes, 180ºC, speed off
  17. Transfer the chicken to the prepared baking tray
  18. Repeat the same with the remaining chicken
  19. Add the mayo and sauce into small serving bowls
  20. Serve
