This Victoria Sponge inspired cake puts a twist on the classic by taking the shape of a sheet cake. It’s incredibly easy to make and decorate and is the perfect choice for sharing at celebrations or events. If you prefer, you can swap the strawberry jam for raspberry jam. Store covered at room temperature for up to three days.

  1. Making the cake:
  2. Preheat the oven - 175ºC
  3. Grease a tin and line with parchment paper overlapping the edges
  4. Fit the K-Beater
  5. Add the ingredients into the appliance bowl
  6. Mix and then scrape the bowl – 3 minutes, speed 4
  7. While the machine is running, gradually add eggs and mix – 2 minutes, speed Min
  8. Add the next ingredients
  9. Mix – 30 seconds, speed Min
  10. Then add the next ingredients
  11. Mix – 1 minute, speed Min
  12. Transfer the batter into the tin
  13. Bake until a skewer inserted comes out clean – 30-35 minutes, 175ºC
  14. Remove from the oven and let cool completely
  15. Making the buttercream:
  16. Clean the appliance bowl and fit the K-Beater
  17. Add the ingredients into the appliance bowl, fit the splashguard
  18. Mix and then scrape the bowl - 2 minutes, speed 3
  19. Mix – 2 minutes, speed 1
  20. Assemble the cake:
  21. Spread the buttercream evenly over the top of the cake
  22. Add a few teaspoons of jam on top
  23. Using a back of a spoon, gently swirl the jam into the buttercream
  24. Decorate with strawberry halves
  25. Serve
