The perfect accompaniment to any celebration feast, these parathas are stuffed with spices, chillies, potatoes and peas. Brush with ghee and use to mop up any leftover curry sauce or eat on their own with yoghurt and herbs for a delicious lunch.

  1. Making the dough:
  2. Fit the Dough Tool
  3. Add the ingredients into the appliance bowl
  4. Knead until a smooth dough formed - 5 minutes, speed 1
  5. Wrap the dough in plastic wrap and set aside
  6. Clean the appliance bowl and fit the Stir Tool
  7. Add the ingredients into the appliance bowl, fit the splashguard
  8. Cook – 20 minutes, 120°C, speed Stir 4
  9. Drain the potatoes into a colander
  10. Let cool – 15 minutes
  11. Making the filling:
  12. Clean the appliance bowl and fit the K-Beater
  13. Add the potatoes and the next ingredients into the appliance bowl
  14. Mix until the potatoes are smooth, and the ingredients are well combined – 2 minutes, speed Min
  15. Transfer the dough to a clean work surface and divide into 12 equal balls
  16. Lightly dust the work surface with flour
  17. Using a rolling pin, roll out one piece of dough into a 15cm disc
  18. Place one ball of filling into the centre
  19. Pull the sides of the dough over the filling to enclose and pinch to seal
  20. Form into a ball again, then gently roll into a 15 cm disc
  21. Repeat the same rolling and filling process with the remaining dough and filling
  22. Preheat a frying pan – medium heat
  23. Add one paratha into the hot pan
  24. Cook until brown – 2 minutes, medium heat
  25. Flip over and cook - 2 minutes, medium heat
  26. Transfer to a warm plate, brush both sides with melted ghee and cover with a clean kitchen towel
  27. Repeat the same with the remaining parathas
  28. Serve
