These braised aubergines are the perfect sweet and savoury side dish to any Chinese feast and could even be served alongside steamed rice and vegetables as a vegan main course. Flavoured with garlic, ginger, spring onion, and Sichuan peppercorns, this dish has the perfect balance of aromatics and spice.

Step preview

  1. Add aubergine into a colander and sprinkle with salt
  2. Place over a sink and let drain – 20 minutes
  3. Rinse in cold water, and then pat dry with kitchen paper
  4. Add aubergine and the next ingredient into a large bowl and toss well to coat

  7. Heat - 1 minute, 140ºC, speed off
  8. Add the aubergine
  9. Cook - 5 minutes, 140ºC, speed Stir 3
  10. Then add the next ingredients
  11. Cook - 3 minutes, 140ºC, speed Stir 2
  12. Add the next ingredients
  13. Cook until the sauce has reduced and thickened - 15 minutes, 110ºC, speed Stir 3
  14. Transfer the mixture into a serving dish
  15. Sprinkle with sesame seeds
  16. Serve
