A classic dessert made vegan. We haven't added any coffee liqueur in this recipe but if you want to add it, add 2-4 Tbsp in with the espresso. There will be more biscuits than you need, so store the extras in an airtight container for up to a week to use in other desserts or just as a snack with a cup of coffee.

Step preview

  1. Preheat the oven - 180ºC
  2. Line baking trays with parchment paper
  3. Add the ingredients into a bowl
  4. Mix until combined and set aside
  5. Sift the ingredients into a clean bowl and set aside
  6. Making the biscuits:
  7. Fit the Whisk Tool
  8. Add the ingredients into the appliance bowl
  9. Whisk – 5 minutes, speed Max
  10. Then add sugar slowly when machine is running next
  11. Whisk – 3 minutes, speed Max
  12. Then add the yoghurt mixture gradually when the machine is running
  13. Whisk – 3 minutes, speed 2
  14. Then add the flour mixture gradually when the machine is running
  15. Whisk – 5 minutes, speed Min
  16. Add the batter into a piping bag
  17. Pipe biscuits onto the baking trays, about 6cm long and 2cm wide and space them apart
  18. Dust with icing sugar
  19. Bake – 13 minutes, 180ºC
  20. Remove from the oven and let cool
  21. Making the mascarpone filling:
  22. Clean the appliance bowl and fit the Whisk Tool
  23. Add the ingredients into the appliance bowl
  24. Whisk – 2 minutes, speed Max
  25. Spread a thin layer of cream in a baking dish
  26. Making the coffee mixture:
  27. Add the ingredients into a clean bowl and mix to combine
  28. Dip each biscuit in the coffee mixture and let soak briefly
  29. Add half of the biscuits into the baking dish
  30. Then add half of the remaining cream and spread evenly
  31. Repeat the same process with the remaining biscuits and cream
  32. Dust with cocoa powder
  33. Chill in the fridge – 1 hour
  34. Serve
