  1. Making the dough:
  2. Grease the tins
  3. Fit the Dough Tool
  4. Add the ingredients into the appliance bowl
  5. Let rest – 5 minutes
  6. Then add the next ingredients
  7. Select the Dough preset
  8. Transfer the dough into a clean bowl and cover with a kitchen towel
  9. Prove until doubled in size – 1 hour
  10. Making the cinnamon filling:
  11. Add the ingredients into a clean bowl and mix until combined
  12. Place the dough on a lightly floured work surface and roll out into a rectangle, about 45 cm x 35 cm
  13. Spread the cinnamon mixture onto the dough, leaving a 2 cm gap around the edges
  14. Roll up the dough tightly along the longest edge
  15. Trim the ends
  16. Using a serrated knife, cut the dough into 2.5 cm pieces
  17. Place in the tins and cover with a kitchen towel
  18. Prove – 45 minutes
  19. Preheat the oven - 200°C
  20. Place the muffin tins in the oven and bake – 25 minutes, 200°C
  21. Remove from the oven and place on a cooling rack
  22. Making the cinnamon glaze:
  23. Add the ingredients into a clean bowl and mix until combined
  24. Brush the buns with some of the cinnamon glaze and let cool
  25. Brush again with the remaining mixture
  26. Serve
