A quick, easy but tasty traybake that is great to take to coffee afternoons or picnics. Try adjusting the coffee flavour to your taste or swap it completely for 50 g cocoa powder, just remember to reduce the flour by the same amount.

  1. Making the sponge:
  2. Preheat the oven - 180ºC
  3. Grease a traybake tin and line with parchment paper
  4. Add the ingredients into a small bowl and stir by hand until the coffee has dissolved
  5. Fit the K-Beater
  6. Add the ingredients into the appliance bowl
  7. Then add the coffee mix
  8. Mix until combined - 2 minutes, speed 3
  9. Transfer the batter into the tin
  10. Bake until a skewer inserted comes out clean - 20 minutes, 180ºC
  11. Remove from the oven and let cool in the tin - 5 minutes
  12. Transfer to a cooling rack and let cool completely
  13. Making the icing:
  14. Clean the appliance bowl and fit the Whisk Tool
  15. Add butter into the appliance bowl
  16. Whisk until light and fluffy - 3 minutes, speed 4
  17. Then add sugar
  18. Whisk until combined - 30 seconds, speed Min
  19. Whisk until smooth - 5 minutes, speed 3
  20. Then add the next ingredients
  21. Whisk until combined - 2 minutes, speed 3
  22. Spread the icing onto the sponge and level with a spatula
  23. Then drizzle the cake with caramel
  24. Serve
