Step preview

  1. Making the sponge:
  2. Preheat the oven - 180ºC
  3. Grease a tin and line with parchment paper
  4. Fit the Knife Blade (or Max Blade for kCook Multi)
  5. Add the ingredients into the appliance bowl, attach the lid without the filler cap
  6. Mix until light and fluffy - 1 minute, speed 6
  7. Then add the next ingredients
  8. Mix until combined - 1 minute, speed 6
  9. Transfer the mixture into the tin and level with a spatula
  10. Bake until a skewer inserted comes out clean - 20 minutes, 180ºC
  11. Remove from the oven and let cool completely
  12. Making the cream:
  13. Clean the appliance bowl and fit the Whisk Tool
  14. Add mascarpone into the appliance bowl, attach the lid with the filler cap
  15. Whisk until softened and then scrape the bowl - 30 seconds, speed 10
  16. Then add the next ingredients
  17. Whisk until thick - 2 minutes, speed 10
  18. Cut the cake in half horizontally into even layers
  19. Add lemon juice and icing sugar into a clean bowl and mix until dissolved
  20. Take one sponge and soak briefly into the lemon mixture
  21. Place the sponge back into the tin
  22. Top with the next ingredients
  23. Then add half of the cream and smooth with a spatula
  24. Repeat the same with the second sponge and rest of the ingredients
  25. Top with more sliced strawberries
  26. Serve
