A classic vanilla cupcake recipe with a gorgeously swirled buttercream topping is the perfect recipe for every home baker, perfect for celebrations or baking with the kids, these can be easily customized to incorporate your choice of toppings or inclusions. We have dyed our icing different colours to create a two-tone effect. This recipe can be halved to make 12 cupcakes if you prefer.

Step preview
- Making the cupcakes:
- Preheat the oven - 180ºC
- Line cupcakes tins with paper cases
- Fit the Creaming Beater
- Add the ingredients into the appliance bowl
- Mix light and fluffy and then scrape the bowl - 3 minutes, speed Min
- Then add the next ingredients
- Mix until smooth - 1 minute 30 seconds, speed Min
- Spoon the batter into the cupcake cases until halfway full
- Bake until golden and a skewer inserted comes out clean - 15 minutes, 180ºC
- Remove from the oven and let cool in the tin – 5 minutes
- Transfer to a cooling rack and let cool completely
- Making the icing:
- Clean the appliance bowl and fit the Creaming Beater
- Add the ingredients into the appliance bowl, fit the splashguard
- Mix until combined and then scrape the bowl – 2 minutes, speed 2
- Mix until smooth – 1 minute, speed 4
- Transfer the icing into a piping bag and pipe onto the cupcakes
- Decorate with sprinkles
- Serve
