Greek tomato fritters are a delicious way to use up a glut of ripe tomatoes, transforming them into mouth-wateringly crisp bites filled with feta, herbs and onion.

Step preview
- Fit the Coarse grating disc to the Food Processor attachment
- Grate tomatoes into the attachment – speed 1
- Strain the grated tomatoes into a colander
- Then add the next ingredients and stir to combine
- Let drain – 30 minutes
- Grate onion into the attachment – speed 1
- Transfer the grated onion into the appliance bowl
- Then add the drained tomatoes
- Fit the K-Beater
- Then add the next ingredients
- Mix until just combined – 30 seconds, speed Min
- Then add the next ingredients
- Mix until just combined – 30 seconds, speed Min
- Chill in the fridge – 30 minutes
- Line a plate with paper towels
- Add oil into a frying pan, enough to cover the base
- Heat until hot – medium hot
- Dip a dessert spoon in water and add spoonfuls of the tomato mixture into the pan, spacing them apart
- Fry until golden brown – 2 minutes, medium heat
- Flip over and fry on the other side until golden brown and cooked through – 3 minutes, medium heat
- Transfer the fritters onto the plate
- Repeat the same process with the remaining mixture, adding more oil into the frying pan, if needed
- Serve
