Ricotta is added to this gelato base to give it an incredible creamy texture and slight tanginess, which is scooped onto sweet strawberries and topped with peppery olive oil for a perfectly balanced dessert. Remember to place the bowl in the freezer 24 hours in advance.

Step preview

  1. Fit the Whisk Tool
  2. Add the ingredients into the appliance bowl
  3. Whisk until well combined - 2 minutes, speed 1
  4. Remove the Whisk Tool and fit the Creaming Beater, fit the splashguard
  5. Heat until warm - 1 minute, 60ºC, speed Stir 1
  6. Then add the next ingredient
  7. Mix until combined - 5 minutes, speed Stir 1
  8. Then add the next ingredients
  9. Heat until combined and no lumps remain - 2 minutes, 85ºC, speed Stir 1
  10. Cook until well combined - 7 minutes, 95ºC, speed Stir 1
  11. Pour the mixture through a sieve into a clean bowl and cover with plastic wrap
  12. Chill in the fridge - 2 hours
  13. Retrieve the gelato mixture from the fridge
  14. Attach the Frozen Dessert Maker attachment to the machine
  15. Start the machine, slowly pour the gelato mixture and mix - 30 minutes, speed Min
  16. Transfer the gelato into an airtight container
  17. Cover with a lid and freeze overnight
  18. Fit the Knife Blade to the Food Processor attachment
  19. Add the ingredients into the attachment
  20. Blend until coarsely blended – 20 seconds, speed Min
  21. Spoon the strawberries onto the base of the serving bowls
  22. Top with gelato
  23. Drizzle with oil, if desired
  24. Serve
