A delicious pasta with a twist. The beetroot turns the dough into a beautiful pink colour and the walnut sauce makes this dish rich and full of flavour. You can use the pasta once dried or cover and chill in the fridge for up to 24 hours

- Making the pasta:
- Fit the Knife blade to the Food Processor attachment
- Add beetroot into the attachment
- Blend until pureed - about 1 minute, speed Max
- Remove the attachment from the machine and set aside
- Fit the Dough Tool
- Add the beetroot puree and the next ingredients into the appliance bowl, fit the splashguard
- Knead until a smooth dough formed - 3 minutes, speed 1
- Flatten the dough slightly and wrap in plastic wrap
- Chill in the fridge - 30 minutes
- Transfer the dough onto a lightly floured work surface and divide into four equal pieces
- Take one piece and cover the rest with a tea towel
- Flatten the dough into a long flat disc
- Attach the Lasagne Roller attachment
- Adjust the setting to 1, sprinkle some flour between the rollers
- Start the machine and pass the dough through the rollers - speed 1
- Fold the dough in three, rotate and repeat several times
- Repeat passing through the rollers, reducing the setting each time until you reach setting 5 - speed 1
- Set aside the rolled-out dough
- Repeat with the other pieces, flattening them into a long flat disc
- Pass the dough through the rollers on setting 0 and reducing each time until you reach setting 5 - speed 1
- Remove the attachment from the machine
- Attach the Fettuccine Pasta Cutter attachment
- Start the machine and feed the dough through the cutter - speed 1
- Sprinkle the pasta strands with semolina and let dry - 30 minutes
- Making the sauce:
- Clean the appliance bowl and fit the Stir Tool
- Add butter into the appliance bowl, fit the splashguard
- Heat until melted - 1 minute, 115ºC, speed Stir 1
- Then add the next ingredients
- Cook until softened - 3 minutes, 115ºC, speed Stir 1
- Then add walnuts
- Cook until combined - 30 seconds, 115ºC, speed Stir 1
- Then add cream
- Cook until well combined - 2 minutes, 105ºC, speed Stir 1
- Then add the next ingredients
- Cook until well combined - 2 minutes, 105ºC, speed Stir 1
- Season to taste
- Stir until ready to use - 5 minutes, speed Stir 1
- Add water into a large saucepan until 3/4 full
- Then add salt
- Heat until boiling - medium-high heat
- Then add pasta into the saucepan
- Cook and then drain, reserving some pasta water - 2-4 minutes
- Divide the fettuccini between the serving bowls
- Pour the sauce onto the pasta, adding pasta water to loosen, if necessary
- Mix until well combined
- Garnish, if desired
- Serve
