This traditional Christmas ham fills the house with the festive scent of cloves and brown sugar. Serve hot or cold and be sure to save ham cooking liquid as stock for soups. Store the ham in an air-tight container in the fridge for up to 5 days.

Step preview

  1. Add the ingredients into the appliance bowl
  2. Pour in enough water to cover the ham completely
  3. Then add the next ingredients, fit the splashguard
  4. Heat until water begins to simmer - 5 minutes, 140ºC, speed Off
  5. Cook until the ham is fork-tender - 1 hour 30minutes, 100ºC, speed Off
  6. Let the ham to cool completely in the cooking liquid - 1 hour 30 minutes
  7. Preheat the oven - 190ºC
  8. Add the ingredients into a clean bowl
  9. Mix until combined then set aside
  10. Remove the ham from the cooking liquid and place it on a wire rack set over a baking tray
  11. Let it drain briefly, then remove any string
  12. Using a sharp knife, carefully remove the rind from the ham, leaving the layer of fat intact
  13. Score the fat in a diamond pattern, then place a clove at each point where the lines meet
  14. Brush 2/3 of the sugar and mustard mixture over the fat, reserving the rest for later
  15. Then add 100 g of water onto the baking tray
  16. Bake until the glaze begins to caramelize - 15 minutes, 190ºC
  17. Remove from the oven and brush the ham with the remaining glaze
  18. Bake until the glaze is golden and sticky - 10 minutes, 190ºC
  19. Remove from the oven and let rest - 10 minutes
  20. Serve
