Step preview

  1. Making the meringue:
  2. Preheat the oven - 100ºC
  3. Grease a baking tray and line with parchment paper
  4. Fit the Whisk Tool
  5. Add egg whites into the appliance bowl
  6. Whisk until foamy - about 2 minutes, speed Max
  7. Then add sugar gradually while the machine is running
  8. Whisk until soft peaks have formed - about 5 minutes, speed Max
  9. Spoon the meringue onto the baking tray
  10. Then add the melted dark chocolate on top and swirl through the meringue
  11. Using the back of a spoon, gently create a well in the centre
  12. Bake until the meringue lift easily from the paper - 1 hour 30 minutes, 100ºC
  13. Turn the oven off and let the meringue cool in the oven
  14. Making the filling:
  15. Add the ingredients into a saucepan
  16. Heat, stirring constantly, until the coffee has dissolved - low heat
  17. Remove the saucepan from the heat and let cool completely
  18. Clean the appliance bowl and fit the Whisk Tool
  19. Add the ingredient into the appliance bowl
  20. Then add the cooled coffee cream
  21. Whisk until soft peaks have formed - about 1 minute 45 seconds, speed Max
  22. Spoon the cream into the centre of the meringue
  23. Dust the top with cocoa powder
  24. Serve
