These braised aubergines are the perfect sweet and savoury side dish to any Chinese feast and could even be served alongside steamed rice and vegetables as a vegan main course. Flavoured with garlic, ginger, spring onion, and Sichuan peppercorns, this dish has the perfect balance of aromatics and spice.

  1. Add aubergine into a colander and sprinkle with salt
  2. Place over a sink and let drain - 20 minutes
  3. Rinse the aubergine in cold water, then pat dry with kitchen paper
  4. Transfer the aubergine into a clean bowl

  10. Cook until golden brown - 7 minutes, 140ºC, speed 2

  12. Cook until fragrant - 5 minutes, 140ºC, speed 3
  13. Then add the next ingredients
  14. Cook until the sauce has reduced and thickened - 15 minutes, 98ºC, speed 3
  15. Transfer the aubergines to a serving bowl
  16. Garnish, if desired
  17. Serve immediately
