This creamy ice cream is perfect for a year-round treat. It pairs well with berries and stone fruits or add your favourite mix in while transferring your ice cream to the container before freezing. Remember to place the bowl in the freezer 24 hours in advance.

Step preview

  1. Fit the Creaming Beater
  2. Add the ingredients into the appliance bowl
  3. Heat until the milk is near boiling - 2 minutes, 105°C, speed Stir 1
  4. Strain the mixture into a jug and cover the surface with plastic wrap to avoid a film from setting
  5. Let cool
  6. Clean the appliance bowl and fit the Whisk Tool
  7. Add the ingredients into the appliance bowl, fit the splashguard
  8. Whisk until the mixture has come together and then scrape the bowl - 2 minutes, speed 4
  9. Whisk until thick and creamy - 2 minutes, speed 4
  10. Then carefully add the milk mixture while the machine is running
  11. Whisk until incorporated - 3 minutes, speed Min
  12. Remove the Whisk Tool and fit the Creaming Beater
  13. Heat until the custard has thickened - 15 minutes, 85°C, speed Stir 1
  14. Strain the mixture through a fine mesh sieve into a clean bowl
  15. Then add the melted chocolate and stir until combined
  16. Cover with plastic wrap and chill in the fridge until cold - 2 hours
  17. Attach the Frozen Dessert Maker attachment to the machine
  18. Retrieve the cooled mixture
  19. Start the machine, slowly pour the mixture and mix - 30 minutes, speed Min
  20. Transfer the ice cream into an airtight container and cover with a lid
  21. Chill in the freezer overnight until solid
  22. Serve
