A delicious ice cream and a great way to use up bananas. Have on its own or make into a decedent ice cream sundae. Remember to place the bowl in the freezer 24 hours in advance.

  1. Making the caramel:
  2. Add the ingredients into a frying pan
  3. Heat until the sugar has dissolved - low heat
  4. Cook until the caramel turns into a light amber colour
  5. Then add bananas
  6. Cook, stirring gently, until combined - 2-3 minutes
  7. Then add butter and swirl until dissolved
  8. Remove from the heat
  9. Then add cream and stir to combine
  10. Transfer the caramel into a clean bowl and set aside
  11. Making the ice cream:
  12. Add the ingredients into a saucepan
  13. Heat until the milk is near boiling - medium heat
  14. Strain the mixture into a jug and cover the surface with plastic wrap to avoid a film from setting
  15. Let cool
  16. Fit the Whisk Tool
  17. Add the ingredients into the appliance bowl, fit the splashguard
  18. Whisk until the mixture has come together and then scrape the bowl - 2 minutes, speed 4
  19. Whisk until thick and creamy - 2 minutes, speed 4
  20. Then carefully add the milk mixture while the machine is running
  21. Whisk until incorporated - 3 minutes, speed Min
  22. Pour the custard mixture into the saucepan
  23. Heat until the custard is thick enough to coat the back of a spoon - medium heat
  24. Transfer the mixture into a clean jug
  25. Cover with plastic wrap and chill in the fridge until cold - 2 hours
  26. Attach the Frozen Dessert Maker attachment to the machine
  27. Retrieve the cooled mixture
  28. Start the machine, slowly pour the mixture and mix - 30 minutes, speed Min
  29. Transfer half of the ice cream into an airtight container
  30. Drizzle with half of the banana caramel and swirl through
  31. Spoon the rest of the ice cream into the container
  32. Drizzle with the rest of the banana caramel and swirl through
  33. Cover with a lid and chill in the freezer overnight until solid
  34. Serve
