A delicious ice cream and a great way to use up bananas. Have on its own or make into a decedent ice cream sundae. Remember to place the bowl in the freezer 24 hours in advance.

  1. Making the caramel:
  2. Fit the Stir Tool
  3. Add the ingredients into the appliance bowl, fit the splashguard
  4. Cook until the sugar has dissolved - 2 minutes, 160°C, speed Stir 1
  5. Remove the splashguard
  6. Cook until the caramel turns into a light amber colour - 10 minutes, 180°C, speed Off
  7. Then add bananas
  8. Cook until combined - 2 minutes, 180°C, speed Min
  9. Then add the next ingredients
  10. Stir until smooth - 2 minutes, speed Stir 1
  11. Transfer the caramel into a clean bowl and set aside
  12. Making the ice cream:
  13. Clean the appliance bowl and fit the Creaming Beater
  14. Add the ingredients into the appliance bowl
  15. Cook until incorporated - 2 minutes, 105°C, speed Stir 1
  16. Strain the mixture into a jug and cover the surface with plastic wrap to avoid a film from setting
  17. Let cool
  18. Clean the appliance bowl and fit the Whisk Tool
  19. Add the next ingredients into the appliance bowl, fit the splashguard
  20. Whisk until the mixture has come together and then scrape the bowl - 2 minutes, speed 4
  21. Whisk until thick and creamy - 2 minutes, speed 4
  22. Then carefully add the milk mixture while the machine is running
  23. Whisk until incorporated - 3 minutes, speed Min
  24. Remove the Whisk Tool and fit the Creaming Beater
  25. Cook until the custard has thickened - 15 minutes, 85°C, speed Stir 1
  26. Transfer the mixture into a clean jug
  27. Cover with plastic wrap and chill in the fridge until cold - 2 hours
  28. Attach the Frozen Dessert Maker attachment to the machine
  29. Retrieve the cooled mixture
  30. Start the machine, slowly pour the mixture and mix - 30 minutes, speed Min
  31. Transfer half of the ice cream into an airtight container
  32. Drizzle with half of the banana caramel and swirl through
  33. Spoon the rest of the ice cream into the container
  34. Drizzle with the rest of the banana caramel and swirl through
  35. Cover with a lid and chill in the freezer overnight until solid
  36. Serve
