These keto bagels are soft, chewy and satisfying, made with ground almonds and mozzarella for a low-carb take on the classic. They can be kept plain or topped with sesame or poppy seeds. Step preview

  1. Preheat the oven - 190ºC
  2. Line a baking tray with parchment paper
  3. Fit the Knife blade to the Food Processor attachment
  4. Add the ingredients into the attachment
  5. Blend until finely ground - 1 minute, speed Max
  6. Then add eggs
  7. Blend until combined - 20 seconds, speed 3
  8. Remove the attachment from the machine
  9. Add the ingredients into a saucepan
  10. Heat, stirring frequently, until completely melted - about 5 minutes, medium-low heat
  11. Fit the K-Beater
  12. Transfer the cheese mixture into the appliance bowl
  13. Then add the almond mixture
  14. Mix until combined - 2 minutes, speed 2
  15. Transfer the dough to a lightly floured work surface
  16. Roll the dough into a ball and divide into 6 equal pieces
  17. Take one piece of dough and cover the rest of the dough with a tea towel
  18. Roll the dough into a smooth ball
  19. Make a hole in the centre of the ball, using a floured wooden spoon or finger
  20. Gently stretch the dough to make the hole in the centre wider to create a ring
  21. Place the shaped dough on the prepared baking tray
  22. Repeat the same process with the remaining dough pieces
  23. Spray or brush the bagels with oil lightly
  24. Sprinkle seeds over the bagels and lightly press in
  25. Bake until golden brown - 15 minutes, 190ºC
  26. Serve
