Choux pastry is a light pastry dough used for making profiteroles, choux buns and eclairs. This recipe shows you how to make the basic pastry mixture, once the mixture is ready you can use this recipe to make eclairs or find our recipe for choux buns which will show you how to use this pastry mixture to make round bun shapes. The raw choux pastry may be frozen.

Step preview

  1. Line a baking tray with parchment paper and set aside
  2. Add the ingredients into a saucepan
  3. Heat and bring to the boil - high heat
  4. Reduce the heat and simmer - 1 minute, medium heat
  5. Remove the saucepan from the heat
  6. Then add flour and stir vigorously until combined
  7. Preheat the oven - 220ºC
  8. Fit the K-Beater
  9. Add the flour mixture into the appliance bowl, fit the splashguard
  10. Mix until well combined - about 2 minutes, speed 2
  11. Then add eggs gradually while the machine is running
  12. Mix until the paste is smooth and silky - about 5 minutes, speed 5
  13. Transfer the pastry into a piping bag
  14. Pipe onto the tray in your desired shape
  15. Use a wet finger to smooth over any peaks on the surface
  16. Bake until light golden - 10 minutes, 220°C
  17. Remove the baking tray from the oven and turn each pastry over
  18. Prick each pastry with a skewer to make a small hole and allow steam to escape
  19. Reduce the oven temperature and bake until golden brown - 15 minutes, 180°C
  20. Remove from the oven and let cool on a cooling rack
  21. Serve
