A baked choux pastry mixed with cheese for a savoury treat. Common in French cuisine the most common cheeses used are Gruyere, Comte or Emmental but any cheese can be used.

Step preview

  1. Line a baking tray with parchment paper
  2. Add the ingredients into a saucepan
  3. Bring to the boil - high heat
  4. Reduce the heat and simmer - 1 minute, medium heat
  5. Remove the saucepan from the heat, then add flour and stir vigorously until combined
  6. Preheat the oven - 220ºC
  7. Fit the K-Beater
  8. Transfer the flour mixture into the appliance bowl, fit the splashguard
  9. Mix until well combined - about 2 minutes, speed 2
  10. Then add eggs gradually while the machine is running
  11. Mix until the paste is smooth and silky - about 5 minutes, speed 5
  12. Then add grated cheese
  13. Mix until combined - about 2 minutes, speed 3
  14. Transfer the pastry into a piping bag
  15. Pipe onto the baking tray in your desired shape
  16. Use a wet finger or fork to smooth over any peaks on the surface
  17. Bake until light golden - 10 minutes, 220°C
  18. Remove the baking tray from the oven and turn each pastry over
  19. Prick each pastry with a skewer to make a small hole and allow steam to escape
  20. Reduce the oven temperature and bake until golden brown - 15 minutes, 180°C
  21. Remove from the oven and let cool on a cooling rack
  22. Fill and top with your chosen fillings
  23. Serve
