Step preview

  1. Dust a baking tray with flour
  2. Fit the Dough Tool

  8. Cover the bowl with a damp tea towel
  9. Prove until doubled in size - 1 hour
  10. Transfer the dough to a lightly floured work surface
  11. Divide the dough into 10 equal pieces, weighing about 75-80 g each
  12. Shape each piece into a ball and place on the baking tray
  13. Cover the bowl with oiled plastic wrap and prove until doubled in size - 30 minutes
  14. Preheat the oven - 220ºC
  15. Add the ingredients into a clean bowl and mix until the salt has dissolved
  16. Add the next ingredients into a saucepan
  17. Heat until boiling - high heat
  18. Take one dough ball and add carefully into the hot water
  19. Boil and then flip over, using a slotted spoon - 5 seconds, high heat
  20. Boil on the other side - 5 seconds, high heat
  21. Transfer the dough ball onto the baking tray
  22. Repeat the same process with the rest of the dough balls
  23. Brush each bun with the salt water and then sprinkle with sea salt
  24. Use a sharp knife to score a cross pattern on top of each bun
  25. Bake until deep brown - 20 minutes, 220ºC
  26. Remove from the oven and let cool slightly
  27. Serve
