These fun cupcakes are deceptively easy to make but look impressive. We have used a cream cheese icing to top the cakes, but you could also use fresh whipped cream with a little icing sugar and vanilla. Try to use a red food colouring gel for these cakes for a better colour.

  1. Making the cheesecake filling:
  2. Preheat the oven - 180ºC
  3. Line the cupcake tins with paper cases
  4. Fit the K-Beater
  5. Add the ingredients into the appliance bowl, fit the splashguard
  6. Mix until combined - about 2 minutes, speed 3
  7. Transfer the filling into a clean bowl and cover
  8. Chill in the fridge until needed
  9. Making the cupcakes:
  10. Clean the appliance bowl and fit the K-Beater
  11. Add the ingredients into the appliance bowl, fit the splashguard
  12. Mix until combined - about 30 seconds, speed Min
  13. Add the next ingredients into a jug and mix to combine
  14. The transfer the mixture into the appliance bowl
  15. Mix until combined - about 2 minutes, speed 2
  16. Spoon the batter into the cupcake cases, filling just under half full
  17. Pipe about 1 Tbsp of filling into the middle of each case
  18. Then spoon over a little more batter to cover the filling, making sure each cupcake case is no more than 3/4 full
  19. Bake until a skewer inserted comes out clean - 25 minutes, 180ºC
  20. Remove from the oven and let cool in the tin - 10 minutes
  21. Making the icing:
  22. Clean the appliance bowl and fit the Whisk Tool
  23. Add the ingredients into the appliance bowl, fit the splashguard
  24. Whisk until combined - about 30 seconds, speed Min
  25. Whisk until smooth - about 2 minutes, speed 3
  26. Spoon the icing on the cupcakes and smooth with the back of a spoon
  27. Serve
