This date and nut log is a rich, no-bake treat that combines the natural sweetness of dates with the satisfying crunch of almonds and digestive biscuits. Coated in a vibrant layer of finely crushed pistachios, it is the perfect, energy-boosting snack to serve with coffee or tea during Iftar or Suhoor.

Step preview

  1. Fit the Knife Blade to the Food Processor attachment
  2. Add 100 g of pistachios into the attachment
  3. Pulse until broken up
  4. Chop until finely chopped - about 1 minute, speed 2
  5. Transfer the chopped pistachios into a clean bowl and set aside
  6. Add the remaining pistachios and almonds into the attachment
  7. Pulse until coarsely chopped
  8. Transfer the chopped ingredients into a clean bowl and set aside
  9. Add dates into the attachment
  10. Chop until finely chopped - about 20 seconds, speed 2
  11. Remove the attachment from the machine
  12. Fit the Stir Tool
  13. Add butter into the appliance bowl
  14. Heat until melted - 2 minutes, 80ºC, speed Off
  15. Then add the chopped dates and the next ingredients
  16. Cook until the dates have softened - 10 minutes, 98ºC, speed Stir 3
  17. Remove the bowl from the machine
  18. Then add the coarsely chopped pistachios, almonds and biscuits, and mix well by hand until combined
  19. Line a work surface with a piece of baking paper
  20. Spoon the mixture onto the baking paper in a line and shape into a log
  21. Sprinkle the finely chopped pistachios over the log and baking paper
  22. Gently roll and press the log so the pistachios stick and coat it evenly on all sides
  23. Wrap the log in baking paper and chill in the fridge until set - 2 hours
  24. Serve
