These cheese and sesame biscuits are buttery, crumbly, and loaded with sharp cheddar and nutty gruyere. Step preview

  1. Fit the Creaming Beater
  2. Add the ingredients into the appliance bowl
  3. Mix until light and creamy - 4 minutes, speed 1
  4. Then add the next ingredients
  5. Mix until the mixture just comes together - 30 seconds, speed Min
  6. Place a piece of parchment paper onto a work surface
  7. Transfer the dough onto the parchment paper and shape into a 35 cm long log
  8. Wrap the log tightly in the parchment paper and chill in the fridge - 1 hour
  9. Preheat the oven - 170ºC
  10. Line a baking tray with parchment paper
  11. Add the ingredients into a clean bowl and mix until combined
  12. Remove the chilled dough from the fridge and brush all over with beaten egg white
  13. Spread the sesame mixture onto a baking tray, then roll the dough log through it until completely coated
  14. Slice the dough into 1 cm thick discs and place them on the baking tray 2 cm apart
  15. Baking until golden - 22 minutes, 170ºC
  16. Remove from the oven and let cool
  17. Serve
