Get into the Christmas spirit with this eggnog style dessert. Make in advance to allow them to set overnight and then grill in the oven before serving.

Ingredients

    75 g (about ¼ cup)

Step preview

  1. Pre-heat oven - 150°C
  2. place in a clean large roasting dish
  3. Fit whisk tool to kCook bowl
  4. Add double cream, vanilla seeds & pod, cinnamon stick and cloves to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl
  7. Whisk with filler cap removed - 2 min, 85°C, speed 4
  8. Strain content of kCook bowl into jug and reserve liquid
  9. Add brandy to the jug
  10. Set aside
  11. Clean kCook bowl
  12. Fit whisk tool to kCook bowl
  13. Add egg yolk and caster sugar to the kCook bowl
  14. Fit kCook bowl to kCook Multi
  15. Attach lid to kCook bowl
  16. Whisk with filler cap removed and continue - 1 min, speed 6
  17. Pour content of jug into kCook bowl while machine is running
  18. Whisk with filler cap removed - 2 min, speed 4
  19. Strain content of kCook bowl into jug and reserve liquid
  20. Pour content of jug into 6 ramekins evenly
  21. Sprinkle with nutmeg
  22. Fill large roasting dish three quarters of with water
  23. Cover with foil
  24. Bake - 45 min, 150°C
  25. Let cool ramekins
  26. Chill overnight in fridge
  27. Let rest until room temperature - approx 30 min
  28. Sprinkle with light brown sugar
  29. Pre-heat in grill
  30. Grill in grill until golden brown
  31. Serve immediately
