Baghrirs are Moroccan pancakes, recognised by the holes on the surface. These holes are perfect to soak in melted butter and honey when served. During cooking, you only need to cook one side and let them cool individually, otherwise they will stick to each other if you stack them before they have cooled. These pancakes do not require milk or eggs to make, so they are a great recipe for when you have neither ingredient, they also do not require cooking in any fat or oil so they are a healthier option.

Step preview

  1. Fit max blade to kCook bowl
  2. Add durum semolina flour, plain flour, water, salt, dried yeast, baking powder and granulated sugar to the kCook bowl
  3. Fit kCook bowl to kCook Multi
  4. Attach lid to kCook bowl with filler cap fitted
  5. Mix with filler cap fitted then scrape bowl - 3 min, speed 6
  6. Mix with filler cap fitted - 2 min, speed 2
  7. Transfer batter to medium bowl
  8. Cover with kitchen towel
  9. Keep warm - approx 30 min
  10. Pre-heat a clean medium cast iron skillet - medium-high heat
  11. Ladle some of the batter into medium cast iron skillet
  12. Cook one by one until bubbles form - 4 min, medium-high heat
  13. Serve
