Freshly baked pittas are amazingly simple to make and so much nicer than shop-bought. Try them dipped into houmous.

Step preview

  1. Attach Spiral Dough Tool
  2. Add water, dried yeast, plain flour, salt, nigella seeds and olive oil to the Kenwood Bowl
  3. Mix - 2 min, Speed 1
  4. Mix - 8 min, Speed 2
  5. Cover with kitchen towel
  6. Prove until doubled - approx 1 hr 30 min
  7. Transfer dough to lightly floured surface
  8. Gently pull the edges into the centre and turn over so the seam is on the work surface
  9. Divide the dough into 12 equal pieces
  10. Roll each piece into a ball
  11. Cover with kitchen towel
  12. Let rest - 10 min
  13. Pre-heat oven - 220°C
  14. Place a baking sheet on the middle shelf to heat
  15. Use a rolling pin to roll out each dough ball into an oval shape about 3 mm thick
  16. Remove the hot baking tray from the oven
  17. Dust the tray with plain flour
  18. Transfer shaped dough to baking sheet
  19. Bake - 10 min, 220°C
  20. Let cool onto cooling rack
  21. Serve
