Here is one of the pesto’s that I love the most. Simple, tasty and fresh, this courgette and pistachio pesto is made even more refreshing by the mint leaves, which even in minimal quantities make it cool and pleasant, perfect for the hot summer season. It is also a very tasty dressing for pasta salads. User generated recipes have not been re-tested by Kenwood.
