Step preview

  1. Pre-heat oven - 160°C
  2. Line a clean round pan with parchment paper then set aside
  3. Fit whisk tool to kCook bowl
  4. Add egg white and lemon juice to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl
  7. Whisk with filler cap removed - 3 min 30 sec, speed 7
  8. Add caster sugar to the kCook bowl slowly while machine is running
  9. Whisk with filler cap removed - 3 min, speed 6
  10. Transfer content of kCook bowl to medium bowl then set aside
  11. Clean kCook bowl
  12. Fit whisk tool to kCook bowl
  13. Add ricotta cheese, caster sugar and butter to the kCook bowl
  14. Fit kCook bowl to kCook Multi
  15. Attach lid to kCook bowl
  16. Cook with filler cap removed - 5 min, 70°C, speed 4
  17. Then add whole milk to the kCook bowl
  18. Whisk with filler cap removed - 2 min, speed 7
  19. Add egg yolk to the kCook bowl one by one while machine is running
  20. Whisk with filler cap removed - 2 min, speed 7
  21. Then add lemon juice, italian 00 flour, cornflour and salt to the kCook bowl
  22. Whisk with filler cap removed - 2 min, speed 7
  23. Transfer content of kCook bowl to large glass bowl
  24. Transfer egg whites to large glass bowl
  25. Fold gently until combined
  26. Transfer content of large glass bowl to round pan
  27. Spread until level
  28. Bake - 1 hr 10 min, 160°C
  29. Let cool
  30. Serve
