A baked, choux pastry mixed with cheese for a savoury treat. Common in French cuisine, the cheese used if often Gruyère, Comté, or Emmentaler but you can use any of your favourite cheeses.

Step preview

  1. Fit coarse grating disc (3) to direct prep attachment
  2. Fit direct prep attachment to kCook Multi
  3. Pre-heat oven - 180°C
  4. Line a clean baking sheet with parchment paper then set aside
  5. Fit stir tool to kCook bowl
  6. Add water, milk, unsalted butter, salt and caster sugar to the kCook bowl
  7. Fit kCook bowl to kCook Multi
  8. Attach lid to kCook bowl
  9. Heat with filler cap removed - 98°C, speed 3
  10. Then add plain flour to the kCook bowl
  11. Mix with filler cap removed - 1 min, speed 5
  12. Mix with filler cap removed - 3 min 30 sec, speed 6
  13. Add egg to the kCook bowl bit by bit while machine is running
  14. Mix with filler cap removed - 2 min 30 sec, speed 6
  15. Turn direct prep attachment to position 1
  16. Grate gruyère cheese into the kCook bowl with direct prep attachment
  17. Turn direct prep attachment to position 2
  18. Mix with filler cap removed - 1 min, speed 6
  19. Transfer content of kCook bowl to piping bag
  20. Pipe mixture onto baking sheet
  21. Flatten gently until smooth
  22. Brush with egg
  23. Bake - 10 min, 180°C
  24. Prick
  25. Bake until crispy - 10 min, 180°C
  26. Transfer onto cooling rack until cold
  27. Serve
