Step preview

  1. Attach K Beater
  2. Add unsalted butter, ground almonds, plain flour, egg and caster sugar to the Kenwood Bowl
  3. Mix then scrape bowl - 1 min, Speed Max
  4. Mix until light and fluffy - 1 min, Speed Max
  5. Add water, caster sugar, rum and almond extract to a clean saucepan
  6. Heat until boiling - medium-high heat
  7. Stir until thickened then set aside
  8. Pre-heat oven - 180°C
  9. Add croissant to a clean cutting board
  10. Cut length ways without slicing all the way through.
  11. Brush half the syrup from the saucepan inside each croissant.
  12. Spread half the almond paste from the Mixer bowl into each croissant evenly and close them.
  13. Brush the rest of the syrup on top of each croissant.
  14. Spread the rest of the almond paste on top of each croissant.
  15. Sprinkle with flaked almonds
  16. Transfer the croissants from the cutting board onto a baking tray.
  17. Bake - 10 min, 180°C
  18. Dust with icing sugar
  19. Serve
