Step preview

  1. Attach Spiral Dough Tool
  2. Add bread flour, salt, olive oil, water and quick-rise yeast to the Kenwood Bowl
  3. Mix - 2 min, Speed 1
  4. Mix - 8 min, Speed 2
  5. Check the dough, it must be flexible and homogenous
  6. Cover with kitchen towel
  7. Prove until doubled - 1 hr
  8. Transfer dough to lightly floured surface carefully
  9. Gently pull the edges into the centre
  10. Roll the dough over and make into a loaf shape
  11. Transfer shaped dough to banneton
  12. Cover the dough with a damp tea towel and place in a warm, draught free place
  13. Prove until doubled - 1 hr
  14. Pre-heat oven - 220°C
  15. Flour a clean baking tray
  16. Place a small oven proof container filled with boiling water at the bottom of the oven
  17. Retrieve the dough and remove the tea towel
  18. Transfer shaped dough to baking tray
  19. Use a sharp knife or blade to make slashes
  20. Bake until hollow-sounding when tapped - 25 min, 220°C
  21. Remove from oven and let cool
  22. Serve
