These soft, delicious Swedish buns are infused with cardamom and covered in a sweet glaze before being topped with pearl sugar. They are fun to make and look very impressive.

Step preview

  1. Line a clean baking sheet with parchment paper
  2. Add cardamom and milk to a clean saucepan
  3. Heat until just boiling - medium heat
  4. Attach Spiral Dough Tool
  5. Add unsalted butter, caster sugar, dried yeast, salt and egg to the Kenwood Bowl
  6. Mix until just combined - 1 min, Speed 1
  7. Transfer milk mixture to Kenwood Bowl
  8. Mix until just combined - 1 min, Speed 1
  9. Then add bread flour to the Kenwood Bowl
  10. Mix - 5 min, Speed 1
  11. Mix - 10 min, Speed 2
  12. Transfer dough to large glass bowl
  13. Cover with kitchen towel
  14. Prove - 1 hr 30 min
  15. Clean Kenwood Bowl
  16. Attach K Beater
  17. Add ground cinnamon, caster sugar and unsalted butter to the Kenwood Bowl
  18. Mix until combined then set aside - 1 min, Speed 4
  19. Carefully transfer the dough from the glass bowl to a lightly floured work surface
  20. Knock back the dough and divide into two
  21. Roll into a rectangle slightly larger than an A4 piece of paper
  22. Spread half of the filling from the Mixer bowl over the rectangle of dough
  23. Fold the rectangle of dough into thirds, bring the top third down to cover the middle third and then the bottom third up to cover this
  24. Roll the folded rectangle out gently until it is roughly 30 cm x 15 cm deep
  25. Cut the dough into strips around 2.5 cm wide then cut almost the whole way down the middle of the strips so that they remain joined at the top like a pair of legs
  26. Twist the two strips into a coiled knot and place onto the prepared baking tray
  27. Repeat this process with the remaining half of the dough and filling
  28. Cover baking sheet with kitchen towel
  29. Prove - 1 hr
  30. Pre-heat oven - 200°C
  31. Add egg and water to a clean small bowl
  32. Mix until combined
  33. Gently brush the buns with the egg wash
  34. Bake until golden brown - 15 min, 200°C
  35. Add ground cardamom, honey and water to a clean small bowl
  36. Mix until combined
  37. Remove the buns from the oven and brush the buns with the contents of the small bowl
  38. Sprinkle with pearl sugar
  39. Serve
