A quick carrot cake with cream cheese frosting which is an impressive treat for friends and family to share- also great for using up excess carrots! You could add extra chopped walnuts or mixed seeds to decorate the top of the cake if you like.

Step preview

  1. Line 2 clean round pans with parchment paper
  2. Pre-heat oven - 180°C
  3. Attach K Beater
  4. Add plain flour, bicarbonate of soda, baking powder, ground cinnamon, mixed spice and salt to the Kenwood Bowl
  5. Mix - 10 sec, Speed 2
  6. Then add milk, oil, egg, lemon juice, vanilla extract and light brown sugar to the Kenwood Bowl
  7. Mix - 30 sec, Speed 2
  8. Then add carrot, dessicated coconut, walnut pieces and orange to the Kenwood Bowl
  9. Mix until combined - 20 sec, Speed 4
  10. Divide batter between 2 round pans
  11. Bake - 30 min, 180°C
  12. Let cool - 10 min
  13. Turn out on round wire rack and let cool
  14. Clean Kenwood Bowl
  15. Attach K Beater
  16. Add icing sugar, cream cheese, butter and vanilla extract to the Kenwood Bowl
  17. Mix - 1 min, Speed 4
  18. Transfer icing to medium bowl
  19. Chill in fridge until thickened - 10 min
  20. Place one sponge layer onto a large serving plate
  21. Spread some of the icing evenly onto the sponge then sandwich the second sponge layer on top
  22. Spread the remaining icing on top of the cake
  23. Dust with ground cinnamon
  24. Sprinkle with walnuts
  25. Serve
