A middle ground between cake and bread, Babka is a dough filled with cinnamon spiced chocolate rolled up and twisted to form its distinctive shape then baked in a loaf tin. A perfect indulgent treat to accompany a cup of coffee.

Step preview

  1. Grease a clean loaf pan
  2. Attach Dough Hook
  3. Add whole milk, plain flour, strong white bread flour, caster sugar, dried yeast, egg and salt to the Kenwood Bowl
  4. Mix with splashguard fitted - 2 min, Speed Min
  5. Add unsalted butter to the Kenwood Bowl while machine is running
  6. Mix with splashguard fitted until dough forms - 8 min, Speed 2
  7. Cover with kitchen towel
  8. Prove until doubled - 1 hr
  9. Chill in fridge - 30 min
  10. Add unsalted butter, dark chocolate, caster sugar and ground cinnamon to a clean saucepan
  11. Heat until melted - medium heat
  12. Let cool
  13. Transfer chilled dough to a floured work surface
  14. Roll out to a large rectangle
  15. Spread the melted chocolate mixture over the surface of the dough
  16. Roll up the dough tightly using the long edge
  17. Place the dough so the seam is underneath
  18. Cut the dough length ways down the centre
  19. Twist the dough lengths around each other
  20. Place in a greased loaf tin, if the dough is too long you can place it in folded over itself
  21. Cover with kitchen towel
  22. Prove until doubled - 30 min
  23. Pre-heat oven - 180°C
  24. Retrieve the dough
  25. Brush with egg
  26. Bake - 1 hr, 180°C
  27. Cover with foil if the loaf begins to burn
  28. Remove from oven and let cool - 10 min
  29. Turn out onto cooling rack
  30. Let cool completely
  31. Serve
