Use this recipe as your base for all choux-based creations. To make profiteroles pipe into rounds or to make eclairs simply pipe into lines. Once the pastry is cooled you can fill with any flavour cream and top with any topping, the flavour combinations are endless!

Step preview

  1. Add water, butter and salt to a clean saucepan
  2. Heat until boiling then reduce heat - high heat
  3. Heat until simmering and turn off heat - 1 min, medium heat
  4. Add plain flour to the saucepan
  5. Stir vigorously until combined
  6. Attach K Beater
  7. Transfer content of saucepan to Kenwood Bowl
  8. Mix with splashguard fitted - 2 min, Speed 2
  9. Add egg to the Kenwood Bowl while machine is running
  10. Mix - 5 min, Speed Max
  11. Transfer mixture to piping bag
  12. Pre-heat oven - 220°C
  13. Line a clean baking sheet with parchment paper
  14. Pipe out the choux into the chosen shape
  15. Use a wet finger or fork to smooth over any peeks on the surface
  16. Bake then reduce heat - 10 min, 220°C
  17. Pre-heat oven - 180°C
  18. Remove from oven
  19. Turn each pastry over
  20. Insert a skewer into the base to allow steam to escape
  21. Bake - 15 min, 180°C
  22. Transfer onto cooling rack and let cool
  23. Use
