This beautiful loaf is so simple to make and it’s the real thing. The slow proving process gives it a depth of flavour that develops naturally and is like that of a sourdough.

Step preview

  1. Flour a clean bread proving basket
  2. Attach K Beater
  3. Add water, rye flour and dried yeast to the Kenwood Bowl
  4. Mix - 1 min, Speed Min
  5. Transfer yeast mixture to small bowl
  6. Let rest - 3 hr
  7. Clean Kenwood Bowl
  8. Attach Spiral Dough Tool
  9. Add plain flour, salt and water to the Kenwood Bowl
  10. Transfer yeast mixture to Kenwood Bowl
  11. Mix - 2 min, Speed 1
  12. Mix - 8 min, Speed 2
  13. Cover with kitchen towel
  14. Prove - 1 hr 30 min
  15. Transfer the dough from the Kenwood mixer bowl to a lightly floured work surface
  16. Gently pull the edges into the centre
  17. Roll the dough over and shape into a loaf
  18. Place into a prepared round proofing basket with the seal on top
  19. Cover with kitchen towel
  20. Prove - 1 hr
  21. Pre-heat oven - 220°C
  22. Place a small oven proof container filled with boiling water on to the bottom of your oven
  23. Remove the tea towel and tip the dough onto a floured baking tray
  24. Cut a criss cross pattern with a razor blade or very sharp knife
  25. Bake - 30 min, 220°C
  26. Let cool on round wire rack
  27. Serve
