Traditionally spiced fruit buns decorated with pastry crosses, this version has a sticky, sweet apricot jam glaze.

Step preview

  1. Attach K Beater
  2. Add bread flour, unsalted butter and mixed spice to the Kenwood Bowl
  3. Mix until coarse crumbs form - 1 min, Speed 4
  4. Then add dried yeast, caster sugar and salt to the Kenwood Bowl
  5. Mix - 30 sec, Speed 4
  6. Attach Spiral Dough Tool
  7. Add whole milk, egg, candied citrus peel and sultanas to the Kenwood Bowl
  8. Mix - 5 min, Speed 2
  9. Cover with kitchen towel
  10. Prove - 1 hr
  11. Carefully transfer the dough from the Kenwood mixer bowl to a lightly floured work surface
  12. Flatten the dough carefully with your wrist
  13. Take the far edge and roll it back towards you
  14. Gently roll the dough into a sausage shape, being careful to apply even and gentle pressure
  15. Divide the dough into 16 pieces
  16. Cover with kitchen towel
  17. Let rest with kitchen towel - 10 min
  18. Take one piece of dough, place it under the palm of your hand
  19. Gently apply a little pressure and rotate your hand slowly bring your fingers inward, to make a roll shape
  20. Repeat this action with the rest of the dough pieces
  21. Place the dough onto a floured baking tray
  22. Cover with kitchen towel
  23. Prove - 1 hr
  24. Pre-heat oven - 200°C
  25. Add plain flour and water to a clean small bowl and mix
  26. Transfer the paste into a piping bag
  27. Pipe a cross on the top of each bun
  28. Bake - 20 min, 200°C
  29. Add apricot jam and water to a clean small bowl and mix
  30. Whilst the buns are still hot use a pastry brush to glaze the buns with apricot jam
  31. Let cool on round wire rack
  32. Serve
