A simple sweet treat but an old favourite, also a great way to use up extra pastry and any jams or curds you have leftover.

Step preview

  1. Grease a clean muffin pan
  2. Attach K Beater
  3. Add butter, plain flour, salt and caster sugar to the Kenwood Bowl
  4. Mix - 2 min, Speed 2
  5. Then add egg and milk to the Kenwood Bowl
  6. Mix - 1 min, Speed 2
  7. Place the pastry on a work surface and knead together
  8. Wrap the pastry in plastic wrap
  9. Chill in fridge - 30 min
  10. Pre-heat oven - 180°C
  11. Place the pastry from the fridge on to a lightly floured work surface
  12. Roll out pastry to 1 mm thickness
  13. Use a pastry cutter to cut out circles slightly bigger than the muffin pans holes
  14. Place pastry circles in holes of muffin tin and lightly press down to shape
  15. Spoon jam into the muffin pan evenly
  16. Bake - 15 min, 180°C
  17. Let cool - 5 min
  18. Turn out on round wire rack and let cool
  19. Serve
