A sweet buttery bun also known as ‘pain au lait’, this is fairly simple to make but can be made more challenging by shaping into longer rolls and experimenting with slashing on top.

Step preview

  1. Line a clean baking sheet with parchment paper
  2. Attach Spiral Dough Tool
  3. Add milk, dried yeast, plain flour, caster sugar and salt to the Kenwood Bowl
  4. Mix then scrape bowl - 2 min, Speed 2
  5. Mix - 2 min, Speed 2
  6. Then add unsalted butter to the Kenwood Bowl
  7. Mix - 5 min, Speed 2
  8. Cover with kitchen towel
  9. Prove - 1 hr 30 min
  10. Carefully transfer the dough from the Kenwood mixer bowl to a lightly floured work surface
  11. Divide into 12 equal pieces
  12. Fold the edges of each piece into the centre, turn over seam side down
  13. Roll into tight balls using the palm of your hand
  14. Place onto the prepared baking trays evenly spaced out
  15. Cover with kitchen towel
  16. Prove - 45 min
  17. Pre-heat oven - 220°C
  18. Brush with egg
  19. Bake - 20 min, 220°C
  20. Let cool on round wire rack
  21. Serve
