An easy moist and tropical traybake with a lemon drizzle inspired icing. If you’re making this cake just for adults swap some of the juice in the icing for rum.

Step preview

  1. Line a clean square pan with parchment paper
  2. Pre-heat oven - 180°C
  3. Attach K Beater
  4. Add butter, golden caster sugar, egg, plain flour and baking powder to the Kenwood Bowl
  5. Mix - 2 min, Speed 1
  6. Then add pineapple and dessicated coconut to the Kenwood Bowl
  7. Mix - 1 min, Speed 1
  8. Transfer batter to square pan
  9. Bake - 40 min, 180°C
  10. Add caster sugar, pineapple juice and lime juice to a clean small bowl and mix
  11. Using a skewer poke holes into the hot cake and pour the sugar mixture over the top
  12. Let the cake cool in the tin
  13. Cut into squares
  14. Serve
