Pirog dough is similar to a shortbread. In this recipe it forms a biscuit base topped with a layer of jam and toasted walnuts which is finished with meringue before baking, culminating in a sweet and comforting combination similar to a marshmallow and biscuit treat.

Step preview

  1. Grease a clean baking sheet
  2. Pre-heat oven - 175°C
  3. Attach K Beater
  4. Add egg yolk, caster sugar and unsalted butter to the Kenwood Bowl
  5. Mix until combined - 2 min, Speed 4
  6. Then add sour cream and vanilla extract to the Kenwood Bowl
  7. Mix until combined - 2 min, Speed 4
  8. Add bicarbonate of soda and white vinegar to a clean small bowl and mix
  9. Transfer vinegar mixture to Kenwood Bowl
  10. Mix until combined - 1 min, Speed 4
  11. Then add baking powder and plain flour to the Kenwood Bowl
  12. Mix until combined - 2 min, Speed 3
  13. Transfer dough to work surface
  14. Wrap with plastic wrap
  15. Chill in fridge - 30 min
  16. Transfer dough to lightly floured surface
  17. Roll the dough into a rectangle roughly 13 by 9 inches
  18. Transfer dough to baking sheet
  19. Spread with raspberry jam
  20. Sprinkle with walnuts
  21. Clean Kenwood Bowl
  22. Attach Whisk
  23. Add egg white to the Kenwood Bowl
  24. Mix until soft peaks form - 1 min, Speed 6
  25. Add caster sugar and salt to the Kenwood Bowl gradually while machine is running
  26. Mix until stiff peaks form - 2 min, Speed 6
  27. Spoon meringue into baking sheet
  28. Spread
  29. Bake - 40 min, 175°C
  30. Let cool
  31. Slice into squares
  32. Serve
