Step preview

  1. Attach Spiral Dough Tool
  2. Add rye flour, salt, dried yeast, treacle and water to the Kenwood Bowl
  3. Mix - 2 min, Speed 1
  4. Mix - 8 min, Speed 2
  5. Cover with kitchen towel
  6. Prove - 1 hr
  7. Flour a clean bread proving basket
  8. Transfer dough to lightly floured surface carefully
  9. Pull the edges of the dough into the centre
  10. Transfer the dough into the bread proving basket seam side up
  11. Cover with kitchen towel
  12. Prove - 1 hr
  13. Pre-heat oven - 220°C
  14. Place a baking tray in the oven to heat up
  15. Once the baking tray has heated, tip the dough onto it
  16. Use a sharp knife or blade to slash the bread
  17. Place a small oven proof container filled with boiling water on to the bottom of your oven
  18. Bake - 25 min, 220°C
  19. Let cool onto cooling rack
  20. Serve
