These cookies are a quick and easy vegan alternative, just as chewy and chocolatey as cookies should be! The egg substitute is a combination of ground flax seeds and water, which is mixed and set aside for a few minutes beforehand and we used a non-dairy margarine instead of butter.

Step preview

  1. Line a clean baking sheet with parchment paper
  2. Add ground linseed and water to a clean small bowl
  3. Mix until combined then set aside
  4. Attach K Beater
  5. Add non-dairy margarine, light brown sugar, caster sugar, plain flour, salt, baking powder and vanilla extract to the Kenwood Bowl
  6. Transfer content of small bowl to Kenwood Bowl
  7. Mix - 1 min, Speed 3
  8. Then add dark chocolate chips to the Kenwood Bowl
  9. Mix - 20 sec, Speed 3
  10. Form the cookie dough into golf ball sized balls, placing them onto the prepared baking tray, spaced evenly
  11. Chill in fridge - 20 min
  12. Pre-heat oven - 160°C
  13. Bake - 14 min, 160°C
  14. Serve
