Step preview

  1. Pre-heat oven - 190°C
  2. Fill the roasting tin halfway with boiling water and place in the oven
  3. Prepare 8 clean ramekins
  4. Brush with butter
  5. Add breadcrumbs to the ramekins
  6. Coat the inside of the ramekins and tip out the excess breadcrumbs
  7. Attach the Creaming Beater
  8. Add all purpose flour, butter, paprika and dry mustard to the Cooking Chef XL Bowl
  9. Lift the Cooking Chef head and fit the heat shield
  10. Cook with splashguard fitted - 3 min, 95°C, Speed Max
  11. Add milk to the Cooking Chef XL Bowl while machine is running
  12. Mix with splashguard fitted until smooth - 2 min, 95°C, Speed 2
  13. Add egg yolk, gruyère cheese, parmesan cheese and salt to the Cooking Chef XL Bowl while machine is running
  14. Mix with splashguard fitted until thickened - 4 min, Speed 4
  15. Transfer content of Cooking Chef XL Bowl to large glass bowl
  16. Cover with plastic wrap and let cool
  17. Clean Cooking Chef bowl
  18. Attach the Whisk
  19. Add egg white to the Cooking Chef XL Bowl
  20. Whisk with splashguard fitted - 1 min 30 sec, Speed Max
  21. Spoon one third of egg whites into cheese mixture
  22. Fold gently until combined
  23. Gently fold in another 1/3 of egg white into the mixture making sure not to knock out too much air
  24. Carefully fold it the remaining egg white into the cheese mixture
  25. Spoon cheese mixture into 8 ramekins
  26. Fill the ramekins with the mixture, 2/3 to the top
  27. Carefully place ramekins into the prepared roasting tin in the preheated oven
  28. Bake until golden brown - 12 min, 190°C
  29. Remove from oven
  30. Serve immediately
  31. Garnish with fresh chives
