Soft, wonderful muffins with a chocolate centre. Make sure not to overfill your muffin cases with the batter to leave room for the chocolate spread, then spoon the remaining batter on top to cover the chocolate. User generated recipes have not been re-tested by Kenwood.

Step preview

  1. Pre-heat oven - 160°C
  2. Line a clean muffin pan with paper muffin cups
  3. Fit whisk tool to kCook bowl
  4. Add butter and caster sugar to the kCook bowl
  5. Fit kCook bowl to kCook Multi
  6. Attach lid to kCook bowl with filler cap fitted
  7. Mix with filler cap fitted - approx 2 min, speed 7
  8. Then add ricotta cheese and lemon zest to the kCook bowl
  9. Mix with filler cap fitted - 2 min, speed 7
  10. Add egg to the kCook bowl one by one while machine is running
  11. Add italian 00 flour and baking soda to the kCook bowl
  12. Mix with filler cap fitted - 2 min, speed 5
  13. Spoon two thirds of batter into muffin pan
  14. Add hazelnut chocolate spread to the muffin pan
  15. Spoon into the center
  16. Spoon the rest of batter into muffin pan
  17. Bake - 45 min, 160°C
  18. Let cool completely
  19. Serve
