Step preview

  1. Line a clean loaf pan with parchment paper then set aside
  2. Attach the Stir Tool
  3. Add blackberries, caster sugar and lemon to the Cooking Chef XL Bowl
  4. Lift the Cooking Chef head and fit the heat shield
  5. Cook with splashguard fitted - 5 min, 120°C, Stir 1
  6. Transfer content of Cooking Chef XL Bowl to heatproof bowl then set aside
  7. Clean Cooking Chef bowl
  8. Attach the Whisk
  9. Add whipping cream, caster sugar, gin and fruit liqueur to the Cooking Chef XL Bowl
  10. Whisk with splashguard fitted until peaks form - 1 min 30 sec, Speed 4
  11. Transfer content of Cooking Chef XL Bowl to medium glass bowl then set aside
  12. Clean Cooking Chef bowl
  13. Attach the Whisk
  14. Add crème fraîche to the Cooking Chef XL Bowl
  15. Whisk with splashguard fitted - 1 min, Speed Max
  16. Return fruit to Cooking Chef XL Bowl
  17. Return cream to Cooking Chef XL Bowl
  18. Mix with splashguard fitted - 10 sec, Stir 1
  19. Pour content of Cooking Chef XL Bowl into loaf pan
  20. Spread until level
  21. Freeze overnight until set
  22. When frozen cover top with plastic wrap (this can keep for 1 month)
  23. Clean Cooking Chef bowl
  24. Attach the Stir Tool
  25. Add lemon juice, lemon, blackberries, caster sugar and gin to the Cooking Chef XL Bowl
  26. Cook with splashguard fitted - 5 min, 120°C, Stir 1
  27. Strain content of Cooking Chef XL Bowl into jug and reserve liquid
  28. Chill in fridge - approx 1 hr
  29. Turn out content of loaf pan onto serving plate
  30. Drizzle serving plate with sauce
  31. Decorate with blackberries and lemon zest
  32. Serve
